Use System Variable 289: Default Fallback From Email When Sending Mails in the System to determine the fallback From email address that will be used when sending email messages from WorkBook.

In the field of this System Variable, you can enter the email address that you want the default fallback From address to be. This email address will be used when sending notification email messages or if WorkBook cannot find the email address of the user sending the mail.

The default value for this setting is WorkBook_Agent_<servername>.<databasename>.

It may be necessary to perform a refresh when modifying System Variable values.
